Cheesy Chicken Enchiladas

Modern Comfort Food is here and just in time for a fall/winter season that is sure to be a doozy. As Ina Garten writes in the book, “Food has an almost magical ability to comfort us, soothe us, and bring us together in so many ways.” We wholeheartedly agree and there are so many great recipes in Ina Garten’s latest Barefoot Contessa Cookbook, it was hard to choose where to start! Everyone in our family loves Mexican food, so we decided to start with Cheesy Chicken Enchiladas and let me tell you it was a HUGE hit. It’s a fairly classic Mexican dish but of course, Ina gives it a delicious twist!

There are lots of things I love about summer in NYC: long days of sunlight, fresh peaches, playing "identify that smell" on the streets...but the thing I don't love is my inability to entertain in my apartment. I can't imagine torturing my friends by using the oven or stovetop, creating a sauna in our sixth-floor apartment. So when the weather cools, I immediately plan the meals I've been thinking about for months...

In The Kitchen - Lemon & Herb Chicken

It’s mid-week and my husband has worked late the past few days. It’s just one of those times when cooking a full meal seems daunting, and also one of those times that I’m thankful I have recipes, from great cooks like Ina Garten's How Easy is That, stored in my head! This Baked Lemon & Herb Chicken is my version of Ina’s Lemon Chicken Breasts. Delicious and SO EASY!

In The Kitchen - Roast Chicken and Veggies

It’s snowing again in NY and we have been in the mood for something warm, cozy, and comforting…nothing better than Roast Chicken. I use Ina’s Perfect Roast Chicken recipe as a guide and change it up depending on what’s in my fridge. This week I had potatoes and sweet potatoes, so that’s what I used and it was delicious!
