5 oz brie cheese in 1-inch chunks, rind removed
1/2 cup chopped spinach
4 sun-dried tomatoes chopped
Preheat oven to 350 degrees
Place brie in mini cast iron skillets and scatter spinach and sun-dried tomatoes on top of the cheese. Place skillets on a half sheet pan and bake for 15 minutes, stirring once to combine. Remove from heat. Serve with crackers or French bread.
